Black Bean Pate
Sprouted Black Bean & Roasted Red Pepper Pate
This creamy, protein rich dip is brimming with goodness. The sprouted nuts add texture and easily digestible nutrients, making a satisfying lunch spread
on a tortilla with fresh veggies and sprouts.
Makes 2 cups
Ingredients:
1 cup black beans, cooked, rinsed and drained
1 roasted red pepper
1/2 cup sprouted pumpkin and or sunflower seeds *
2-3 Tbsp flax oil ~ we use Omega Nutrition brand ~ chili garlic flavored
1/4 cup cilantro, stems and leaves
juice of 1 lime
1 tsp ground cumin, toasted
1 tsp ground coriander, toasted
1/2 -1 tsp chipotle puree
1/2- 1 tsp Celtic sea salt
Mindful Preparation:
1. Combine all ingredients in the bowl of a food processor
2. Blend until smooth, adding water if necessary
* Soak the seeds for 6-12 hrs and rinse well. This will release digestive inhibitors and allow your body to assimilate more nutrients.
This dip will keep well for up to 4 days refrigerated.
