As our season is winding down in Baja Mexico, We are filled with gratitude for all the amazing souls that joined us at Prana del Mar this winter.

Our Nourish Your Seed Full Moon Retreat with Chia Rafelson was a potent offering, with 17 guests and many locals joining us for the day. Chia seeds infused our menu in everything from breakfasts to desserts. Next year's dates are set for March 3-10th, 2012

Shani has been embracing these last magical moments in paradise before her journey back to the farm. Connecting with the Transformational Breath Family, nourishing the community with locally inspired dishes, enjoying the whales breaching and savoring a few last warm waves.

We are excited about the freshly renovated hOMe Grown Living Foods space. Certification is close and we hope to be back in production later this month.

Recipe for Chia Pudding

Chia Seeds ~ Aztec Seed of Strength

Are one of the richest vegetables source for the essential omega-3 fatty acid. They are also a rich source of calcium, containing the important mineral boron, which acts as catalyst for the absorption and utilization of the calcium by the body.

The gel that is formed in the stomach creates a physical barrier between carbohydrates and the digestive enzymes that break them down, thus slowing the conversion of carbohydrates into sugar. Chia seeds are a muscle and tissue builder and an energizer of endurance with extensive hydration properties.

DID YOU KNOW?

Aztec traders and warriors often subsisted on nothing more than nutritional chia seeds during their long expeditions. In fact, chia was so highly valued in the Aztec culture that it was considered a form of currency.

Chia Pudding

Serve as a breakfast cereal or a delicious dessert. This is simple to make and will fuel your body to sustain a healthy lifestyle.

Serves 4

Ingredients

2 Tbsp chia seeds
2 cups home made nut or seed milk of your choice
2 Tbsp pumpkin seeds
2 Tbsp sunflower seeds
2 Tbsp hemp seeds
1 Tbsp goji berries
1/2 tsp cinnamon 1/4 tsp vanilla bean powder
a little sweetener of your choice

Mindful Preparation

1. Soak pumpkin and sunflower seeds 4-6 hours, rinse thoroughly
2. Combine all ingredients and whisk to ensure the chia seeds are evenly distributed.
3. Refrigerate for at least 1 hour, allowing the chia to absorb liquid and the flavors to meld. Whisk again before serving.....DELISH!!!!!!
