Recipe for Chia Pudding

Are one of the richest vegetables source for the essential omega-3 fatty acid. They are also a rich source of calcium, containing the important mineral boron, which acts as catalyst for the absorption and utilization of the calcium by the body.
The gel that is formed in the stomach creates a physical barrier between carbohydrates and the digestive enzymes that break them down, thus slowing the conversion of carbohydrates into sugar. Serves 4
Ingredients
2 Tbsp chia seeds
2 cups home made nut or seed milk of your choice
2 Tbsp pumpkin seeds
2 Tbsp sunflower seeds
2 Tbsp hemp seeds
1 Tbsp goji berries
1/2 tsp cinnamon
1/4 tsp vanilla bean powder
a little sweetener of your choice
Mindful Preparation
1. Soak pumpkin and sunflower seeds 4-6 hours, rinse thoroughly
2. Combine all ingredients and whisk to ensure the chia seeds are evenly distributed.
3. Refrigerate for at least 1 hour, allowing the chia to absorb liquid and the flavors to meld. Whisk again before serving.....DELISH!!!!!!
