Updates at Milagro Retreats
Greetings from our Farm in the Cowichan Valley, where the melodic sounds of chirping birds and the blooming crocuses are reminding us that Spring is finally at our doorstep.
We reflect with deep gratitude to the myriad of kindred spirits that joined Milagro Retreats this winter at our Baja Retreats. It was a great honor to nourish and commune with each of you. Mother Ocean is still vibrating through our systems as we say 'Adios' to the daily ritual of Surf and Beach Life, preparing for our Spring/Summer Season here on Vancouver Island.

Vegan Harvest Quiche
Returning to the Cowichan Valley in early Spring always equates to Stinging Nettles for us at Milagro Retreats. It seems that this winter was so cold, not much is sprouting on the Farm...... So we embraced this as a great excuse to rush to the coast, hunting for waves and Nettles. We were not disappointed, although the water is chilly compared to Baja Bliss, the waves were glassy and the Nettles are abundant. Because of their dense concentration of amino acids and minerals, nettles are a healthy spring tonic for the kidneys, adrenal and thyroid glands. They help increase and stabilize energy levels and help build strong bones and healthy skin, hair and teeth. Nettles are also a general tonic for pregnant, lactating and menopausal women.
Harvest Quiche
Serves 8
This decadent savory pie can is a rich vegan main course with creamy cashews and meaty mushrooms. If you enjoy eggs and cheese, see the substitutions for a more traditional but heart healthier quiche with spelt flour and coconut oil.
Crust
* 1 1/2 cups of spelt flour
* 1/2 cup of almonds
* 1/2 cup of sunflower seeds
* 1/4 - 1/2 cup water
* 1/2 tsp sea salt
* 1/2 cup coconut oil
* 1 tsp paprika or ancho chili powder
Filling
* 2 Tbsp olive oil or ghee
* 1 onion minced
* 1 tsp sea salt
* 2 cups wild mushrooms
* 1 cup zucchini chopped
* 1 cup of broccoli
* 4 cups greens chopped ~ whatever is locally available
* 1 cup raw cashews ~ soaked 1-2 hours and rinsed
* 1/2 cup pine nuts
* juice of 1 lemon
* 1 Tbsp white miso
* 2 Tbsp nutritional yeast
* 1 tsp fresh cracked pepper
* 1/4 cup cured black olives, chopped (optional)
Mindful Preparation:
1. Grind almonds and sunflower seeds in the food processor. Add flour, salt, chili powder and coconut oil, pulse to combine. Sprinkle in the water and mix until the dough just holds together.
2. Grease a 10 inch pie plate with coconut oil and press the dough to form crust.
3. Saute onion in ghee over high heat for a couple minutes, reduce to low, add salt to release liquid and simmer until translucent. Add mushrooms, sauté 10 minutes, until softened and liquid has been released and absorbed. Add zucchini and broccoli sauté 3 -5 minutes. Remove from heat, add greens while mixture is still hot to encourage wilting.
4. Blend soaked cashews and pine nuts with lemon juice, miso and enough water to emulsify. Fold the cashew cream into the sauté mixture, and add optional olives. Season with salt and fresh cracked pepper.
5. Press mixture firmly into crust and top with sliced tomatoes. Bake @ 375 for 30-40 minutes until golden brown. Allow to cool for 10 minutes before slicing.
Dairy Option:
Replace cashews and pine nuts with 4 eggs, whisked and ˝ cup goat cheese. Omit miso and lemon juice.

The New Moon in Aries
Aries, the youngest of the signs represents the inner child. This is the New Moon for turning over a new leaf, starting fresh and realizing your true nature.
Aries rules sports and exercise, so with the arrival of Spring, it's time to get out and start moving your body!

Remember to start sprouting your garden greens with this New Moon. Even if it is too cold outside, a sunny windowsill will encourage growth.....get planting!!
